Diseño y contrucción de un prototipo de campos magnéticos para inactivar microrganismos en el procesamiento de néctares

Hasta ahora los métodos térmicos son las operaciones que garantizan la destrucción de patógenos en las bebidas de fruta, sin embargo, estos procesos disminuyen las propiedades nutricionales y sensoriales del producto. La investigación tuvo como propósito la aplicación del campo magnético como una tecnología que mejore las características de calidad microbiológica y nutricional en proceso de néctares. Es así que se diseñó y construyó un prototipo de campos magnéticos para inactivar microorganismos en el procesamiento de néctares. Los tratamientos fueron: T1 = néctar sin pasteurizar, sin conservantes; T2 = néctar pasteurizado con preservantes; T3 =néctar sin preservante con 5 min de campo magnético; T4 = néctar sin preservante con 10 minutos de campo magnético; T5 = néctar sin preservante con 15 minutos de campo magnético. Se evaluaron en la parte microbiológica la presencia de, mohos y levaduras, resultando el tratamiento 4 el que disminuyó notablemente la población e inhibió el crecimiento de estos microrganismos. Además, las características físico-químicas no se han afectado por la aplicación del campo magnético, sucediendo todo lo contrario con el caso de la vitamina C.
