Eficiencia degases (Hidrógeno y Ozono) en la conservación de carne de pollo (Gallus domesticus) y vacuno (Bos taurus)

Las carnes son fundamentales en la alimentación humana por su contenido
de proteínas de elevada calidad, no obstante, puede ser el medio de transporte de
microorganismos patógenos debido a la incorrecta manipulación durante las
diversas fases de su proceso. La presente labor de investigación se encaminó en
la adición de gas hidrógeno y ozono en trozos de carne de pollo (Gallus domesticus)
y vacuno (Bos taurus) procedentes del mercado modelo de Huánuco y someter en
almacenamiento a 4°C durante 12 días, conjuntamente se evaluaron cinco
tratamientos de carnes de pollo y vacuno envasados al vacío con una atmósfera
modificada compuesto por ozono utilizando un equipo generador de ozono y gas
hidrógeno utilizando un prototipo generador de hidrógeno según los tratamientos
planteados T0=100 g de carne sin gases (testigo); T1=100 g de carne con 100 %
de gas ozono; T2=100 g de carne con 25 % de gas hidrógeno y 75 % de gas ozono;
T3=100 g de carne con 50 % de gas hidrógeno y 50 % de gas ozono; T4=100 g de
carne con 75 % de gas hidrógeno y 25 % de gas ozono; T5=100 g de carne con
100 % de gas hidrógeno; durante el almacenamiento, se evaluó la cinética del
comportamiento de acidez titulable y pH, análisis sensorial, análisis físicoquímico y
análisis microbiológico en los días 0, 4, 8 y 12. Los resultados obtenidos no tuvieron
efecto significativo en las variables respuesta estudiadas, ya que las carnes con
características sensoriales aceptables tuvieron una duración hasta el día 8. En la
carne de pollo el tratamiento sobresaliente fue el T2=100 g de carne con 25 % de
gas hidrógeno y 75 % de gas ozono, y en la carne de res el tratamiento
sobresaliente fue el T3=100 g de carne con 50 % de gas hidrógeno y 50 % de gas
ozono. De los resultados se concluye que el uso de estos gases como conservante
(atmosfera modificada) tuvo efecto positivo en cuanto a las características
sensoriales más no destruye la carga microbiana durante el almacenamiento.
